Valentine’s Day Weekend

“Weekend” doesn’t even really cover what these last few days have been.  I have quite literally had five days off from school.  It’s like extra spring breaks sprinkled throughout my semester.  But no complaints here 🙂  This was me most of the weekend:photo(156)

Lots of couch time, lots of getting work done, and lots of Nike Training Club.  Oh!  And a fun “date night” for Valentine’s Day.  To be honest, I think Valentine’s Day is kind of silly, but I like the excuse to tell Russ all the reasons that he’s great.

Hey, we’re even moving up in complexity!  Two years ago, we sat on the floor with a candle and ate frozen tortellini and green beans (For the record- I LOVED that Valentine’s Day).  Last year, we ate in the dining hall.  And this year, we had a PLANNED menu and an actual table!  It was great.  Spending a whole lot of money on Valentine’s Day dinner is for some people, but it isn’t for me.  Instead, Russ and I made a fun, rich, and delicious dinner.  And we ate it all at the beautiful table that Russ set

I made fettuccine alfredo for dinner.  I followed this recipe, but 2 sticks of butter and 1 and 3/4 cup of cream isn’t something I can get behind, so I used 3/4 of a stick of butter, 2% milk and added flour to the butter to make a roux so that it got thick and

  • The garnish is chopped kale.
  • The romantic set up is a beer pong table with a blanket over it.
  • The chairs are garden chairs.
  • And we ate in the basement (Russ’ room).

And for dessert, Russ made dark chocolate brownies with swirled peanut butter and cookies ‘n’ creme ice
