Homemade Pizza Empanadas

Let me tell you how the pizza empanada was born.  I was making pizzas to take to a little futbol party and I realized that with my measly toaster and only one pan, I would be in the kitchen FOREVER (on a beautiful day, nonetheless) trying to use all my dough.  So while one pizza baked, a rolled out a bunch of little circles, threw in all the proper pizza ingredients, folded them up, added a little twist, and there ya go!  Pizza empanadas were born.  And for good measure, I made one filled with almond butter and raspberry jam 🙂DSC_0003

Homemade Pizza Empanadas
Easy empanadas filled with the classic pizza ingredients. Add your favorite toppings to make them unique!

For the dough
  1. 250 grams pizza flour*
  2. oil according to dough instructions
  3. water according to dough instructions
  4. salt according to dough instructions
For the filling
  1. 1/2 cup of your favorite pizza sauce
  2. 1/2 cup of your favorite cheese
  3. toppings you like: pesto, sauteed vegetables, chicken, etc.
  4. 1 egg
  5. A little water
For the dough
  1. follow the instructions on the package for the pizza dough. If you can't find pizza dough flour in the supermarket, I will link to a recipe.
For the filling
  1. Once the dough has risen, take small, golf ball-sized balls and roll them into 1/4 inch flat rounds. Cut off uneven edges. The round should be about 4 inches in diameter, but should not be too thin or the filling will ooze out when it bakes.
  2. In the center, or slightly to one side, add a small dollop (about 1/2 tsp) of each ingredient.
  3. Wet your fingers with a little water and lightly wet the edges of the round to help it stick.
  4. Fold one half of the dough over to the other side, pinching the empanada shut.
  5. With a fork, you can lightly press the edges to make them look nice.
  6. Scramble the egg in a separate dish and then lightly brush the tops so that they get golden brown.
  7. Bake at 350 degrees for 10-15 minutes or until golden brown. 5 minutes before finishing, you can add a sprinkle of cheese to the top with more egg wash (optional).
Notes
  1. Most major supermarkets sell pizza flour, which already has the yeast mixed in. You just need water, oil, and salt.
  2. Add your favorite pizza ingredients and get creative! I made one with almond butter and jelly and it was perfect for breakfast.
