Wow, it has been SO LONG since I’ve done a What I Ate Wednesday post! Years? Has it been years? I love seeing what other people eat because I love food, but I always think my food is so boring since it’s the same every day, but it’s NOT the same. So, with that long-winded introduction, here is what I’m mostly eating at this point- January 2018. And FYI, this is a good overview of what I eat, but there are some snacks not shown.
Breakfast
I eat breakfast before I start teaching, so somewhere between the hours of 7:30 an 9:00 am. I try to keep it light-ish, since I often eat a second mini breakfast after 2 hours of teaching.
Sometimes I have yogurt with fruit and tiny shake of cereal, and other days, I have oatmeal with milk and cinnamon and coffee x 3.

Snack
At around 11:30, I have a 30 minute break so I almost always have a half of peanut butter sandwich with a glass of milk.
Some days, it has banana! Livin’ on the wild side.
Lunch
I normally eat lunch once I’ve finished teaching for the day, so that’s around 3:30. By the time I finish everything, answer e-mails, and catch up on messages, it’s usually 4:00 pm. Most days, it’s a random mix of what I have in the fridge, as seen here:
Roasted carrots and beets, butternut squash, broccoli, and peppers with a slice of bread, a drizzle of olive oil, and some ‘dukkah’ from Trader Joe’s. I’m writing this on Thursday and had the SAME lunch, plus salmon.
Snack
Since I eat lunch so late, I don’t usually have a snack until 5:30 or 6:00. Usually I have a piece of fruit or cheese, yogurt, or rice cakes with peanut butter. And more coffee. On my favorite days, that coffee is in a coffee shop!
Dinner
Lastly, dinner. I have around 9:30 or 10:00 pm (hey, I’m Spanish). I’m usually STARVING by this point, so it takes the form of a bunch of things throw in the bowl.

Most nights I will end the night with a cup of tea and maybe some chocolate, but I am on a self-inflicted chocolate fast, so that’s not happening 🙂
