I’ve been a sort of a recipe rut lately.  I’m totally in the mood to cook, but I just can’t think of what to cook!  Ugh, problems!  Haha.  Anyway, I’ve totally been overdoing it on the easy vegetarian chili, quick vegetable coconut curry (love this recipe), lentil soup, and lasagna.  They’re my go-to recipes because they’re easy to make, freeze well, and are good, BUT I’m ready for some new flavors.  I get most of my recipe ideas from other bloggers, like Iowa Girl Eats, and A Healthy Slice of Life.  For quick and easy meal ideas, one of my favorite Instagrammers is Rachael’s Good Eats.  So, with a newfound desire for exciting recipes, I went to the interwebs to find some new recipes to try that will get me excited for meals again.  How many rice cakes can you eat topped with hummus and salmon?  I can eat a lot.

I actually made this salad earlier today and it’s AWESOME.  Full of textures- crunchy peppers and carrots and cabbage, and creamy peanut dressing.  So good!

I can’t stop eating salmon, so this looks amazing.  Salmon is one of those foods that can be daunting, but it’s actually incredibly easy to make, and so versatile!  Change the sauce and you’ve got yourself a new meal.

My mom made this when I was home and it was delicious!  Tofu can be kind of soft and lifeless, but this tofu actually got crispy in the oven.  No frying required for this easy recipe!

I love me anything made with butternut squash, nuts, and cranberries.  This salad looks amazing, but I would totally add goat cheese or feta.

If I’m correct, a Buddha Bowl is just a combination of grains, protein, veggies, and a sauce.  This particular one looks awesome due to it’s combination of chick peas and sweet potatoes.  Two of my favorites!
