Wow, it has been a hot minute since I’ve done a Checking In post! I haven’t done one since…February, according to my archives! I love reading these types of posts on other people’s blogs and I also love reading back on my own posts, because these give a good look into the mundane days. Today’s post is Checking In X (10) and I am very excited for the day I get to write Checking In XXX 😉 As soon as this gets posted, I’m off to go get another regreso (the document that lets me back into the country after my trip #Spain #visaproblems) and then I have a 3 hour food tour with a couple of people and then and then and then, I hope Luis and I can grab lunch at this restaurant called Honest Greens that is essentially making millions (not quite) off of serving people healthy food they can make at home. Yes, I am also drinking the Kool-Aid and want to try it out. The rest of the weekend includes (hopefully getting a massage), a couple workouts, seeing some friends, maybe visiting a water park?, another tour, and preparing for our trip! Have a good one!!
Making: lots of plans for next week’s trip the the USA! Stay tuned!
Cooking: lots of salads! There is nothing better than summer produce, so I’ve been making all the summer salads. Next on my list is this Farro Summer Salad, with peaches, tomatoes, summer corn, feta, basil, and more but I plan to exchange the farro for wheatberries. Also, I just made homemade almond milk! Surprisingly easy and much creamier than the store-bought stuff! I’ll probably share the entire experience in too many details because I know you’re all on the edge of your seats with curiosity. Stay tuned.
Drinking: at the moment, seltzer. I’ve been drinking lots of sparkling water lately- even at bars. I like it more than having a beer (sometimes…let’s be real).
Reading: Well, at this very moment, nothing. My Mom gave me a bunch of New York Times Magazines, so I have been trying to get through them before heading to the US. Before that, though, I was reading a lot! One of my favorites was This is How it Always Is by Laurie Frankel. I currently have a bunch of books reserved, so I hope they get to me before our trip!
Wanting: new sweaters and booties, but trying to resist the urge…
Looking: at movie times! Most theaters offer 50% off on Wednesday evenings, FYI. (In Madrid)
Eating: lots of watermelon and peaches and parmesan cheese (separate…but so very equal)
Wishing: that our trip in the US goes completely as planned. We have a lot to fit into a short time. Also, wishing I hadn’t changed the keyboard to English bc it’s a Spanish keyboard and it’s driving me insane! I have to change it back.
Enjoying: writing on my blog! I have a new found inspiration for writing lots of posts, mostly in the form of informative posts for Auxiliars, but it’s been fun.

Feeling: a little lonely, to be honest. Being in Madrid in August is hard. It’s empty, quiet, and a little lonely. I have Luis, of course, but I miss having a community here. People will be back in September, though.

Bookmarking: I just read this article by National Geographic about a face transplant done on the youngest patient in the US, a 21 year old girl who ‘lost her face’ when she was 18. The photos are a little hard to look at, but it’s also an incredible read about science and the power of medicine.
