Hello and Happy Friday, from Madrid, Spain! If you’re new around here, I write these Checking In posts just to fill in some random tidbits of information. I have been writing these types of posts for over 3 years and I love looking back on them! The above photo was my breakfast for the last few days: plain yogurt, cereal, milk, and the last of the juicy peaches for the season. I grabbed a few peaches thinking they would probably be mealy, but they were on super sale and I thought that at worst, they would end up in a smoothie. I was delighted to see that they were perfectly juicey, sweet, and a little tangy! And they were huge so one peach lasted for 2 days. Now, bring on the oatmeal! It’s 9:54 am on Friday, October 4th, 2019. Let’s do this!
Making: nothing at the moment, but the day will include making: 42 bagels, 2 challahs and a pumpkin pie. As soon as this gets posted, I have to get to it!
Cooking: lots of roasted veggies. Specifically: eggplant, sweet potatoes, and zucchini. If you have roasted vegetables, you can build anything around it.
Drinking: water and coffee atm.
Reading: Nothing. I wish I had a good book to get into right now! I am on the wait list for A LOT of books, but so is everyone and their mother, so I don’t expect to get anything anytime soon.
Wanting: not much right now. My new budgeting hobby has made it very fun to save my money instead of spend it. More coming soon!
Looking: forward to the weekend! We have a pretty relaxing weekend on the books- workouts, some bagels, a food market on Sunday. And next weekend we are going to GENEVA and I am SO EXCITED! And then right from Geneva, heading off on another trip!
Eating: I have been eating a lot of tofu lately since I learned how to make it crispy is the oven oil, soy sauce, ginger, garlic, and corn starch). I am going to try to eat less though, since they say too much tofu isn’t good.
Wishing: I didn’t have a tour tonight! I don’t really like them on Friday nights, but I’m sure it will be fun.
Enjoying: all of the plants I purchased! I love that when I sit down to use the computer, I can smell them. Now I just need to keep them alive.
Loving: this new blog tab I added to my Bruja’s Bakery website! So fun!
Hoping: that next week in Geneva is as fun as I hope it is! And also hoping that we find a suitable Bruja’s Bakery location soon.
Listening: to Bastille. I go back and forth with my obsession with Bastille and right now, I’m all in.

Feeling: excited for the weekend! Also a little impatient about Bruja’s Bakery, but things happen when they should.
Wearing: to be honest, my pajamas and flip flos. About to put on my baking uniform, though 😉
Watching: Luis and I started Elite last night. I liked it, but we will see if I really get into it. We just watched Unbelievable and THAT was a good show. Sad, but very, very well done.

Bookmarking: these avocado deviled eggs. I saved the recipe for a possible Thanksgiving appetizer. Yes, it’s the beginning of October and I am thinking about Thanksgiving. To be honest, I started thinking about it in July 😉
