Updates a Spoonful of TLC

Hey there!  I’m writing to you at 10 am on a cozy Saturday morning.  It’s cloudy and grey and there has been a POLAR VORTEX! So it’s like, 50 degrees and FREEZING!  I’ve been up since 7 am because I had to make bagels for Bite Me (the place that sells my bagels) and it was NOT an easy wake up. I worked for 10 hours yesterday, all on my feet and was completely wiped at the end of the day.  I’m feeling ok now, but I’m thinking a nice little nap might be in order later.  The only problem is that I have to deliver 54 bagels tonight, so I need time to make them!  We will see how it all fits together.  So, I’ve been MIA over the last week because I had a huge number of orders (for me and my little kitchen) and hardly had time to sit down at the computer.  Here is a look into what I’ve been doing (and Mom, I’m sorry because it’s all food).

SUNDAY

Last Sunday was a little more relaxed than the rest of the week.  It started nice and easy with these yummy poached eggs over two bagels I dug out of the freezer from MONTHS ago!  They were still fine to eat.  Also served with some pan-fried Halloumi cheese.  Delish.  Updates a Spoonful of TLC

That’s the Bagel of the Month ^^^ It’s oatmeal-cranberry-cinnamon!

Lastly, a little browsing in the Corte Ingles.  I am looking for large, pretty (plastic) plates to use for brunch displays.  I really liked these… which is your favorite?  Leave a comment and tell me which would look nicest with smoked salmon, sliced veggies, and maybe fruit?

Sunday night involved dinner out with my Mom’s close friend and her daughter.  They live in Paris and we haven’t seen them for years.  Actually, for my brother, it had been over 20 years!Updates a Spoonful of TLC

MONDAY

Monday was my only day this week that didn’t involve bakery orders, so I focused on getting things in order on the computer, cleaning up the kitchen, and going food shopping.  My new thing has been to REDUCE plastic, so every Monday I go to the local market to buy our produce.  The lady there is so nice – she gave me this reusable bag when she saw that I didn’t bring enough with me.  And she said it was ‘just for being so nice’.

TUESDAY

Looks like I don’t have any updates, but I know I had to make a lot of bagels and went for a 20 minute run and had a tour.  Busy day.  Oh, I walked home from class bopping to music while admiring this amazing sunset.  That’s the great thing about daylight savings!

WEDNESDAY

On Wednesday, I did a ton of prepping for the next day (ie bagel dough), got a bunch of things done on the computer, and then met my friend, Cristina, for a coffee.  We had a good chat!  It was chilly, but a beautiful spring day.

At night, I went to Emma y Julia with some friends for PIZZA!  It’s right on Cava Baja, so I was a little skeptical, but it was delish.  And it was a super fun night.Updates a Spoonful of TLC

THURSDAY

Thursday was also very, very busy!  I had a lot of prepping to do for Friday because Friday was my busiest day in terms of bagels and cakes.  So I made cookie dough, bagel dough, worked on my newsletter, and then eventually walked to class.  I talked to my Mom on the phone on the way there and my Dad on the phone on the way home, so it was a good day 😉 

I saw this trio on my way home and had to take a picture.  For me, this is very ‘Spain’.  Right before I took the picture, there were walking arm-in-arm.

FRIDAY

Friday was my marathon day! I had to make:

  • 24 chocolate chip cookies
  • 1 apple cake
  • Bruja's Bakery
  • 1 healthy cookie pie
  • 54 bagels
  • the dough for 42 regular bagels
  • the dough for 24 rainbow bagels

And since I was making rainbow bagels for quite awhile…. the color didn’t exactly come off my hands before dinner with Lee (my brother) and Luis.  Haha!
