Easy Vegetarian Taco Bowls

Vegetarian Taco Bowls

These taco bowls have been a go-to recipe for the last couple of weeks.  They came together after making a vegan ‘taco’ mix and then I added all of the other ingredients to make Taco Bowls!  The taco mix in this recipe is vegan, but you could use meat if you prefer.  Besides the tofu mix, you also need a base of rice (we used brown rice), some cut veggies (we used corn, roasted sweet potatoes, black olives, cherry tomatoes, red onion, and avocado), something spicy (we used jalapeños), and something crunchy, like tortilla chips!  We also added a dollop of Greek yogurt and it added the perfect amount of creaminess.  Enjoy!Vegetarian Taco Bowls

VEGETARIAN TACO BOWLS

Ingredients for Tofu Scramble:

  • 1 onion, chopped
  • 2 cloves of garlic, chopped
  • 1 block firm tofu, diced after being pressed to remove liquid
  • 1 can/ jar of red beans
  • 1 jar tomato sauce (or homemade)  
  • 1 tsp cumin
  • salt and pepper

Other Ingredients:

  • Brown rice (or white)
  • Diced tomatoes
  • Sliced black olives
  • Chopped red onion
  • Roasted sweet potatoes (optional)
  • Canned sweet corn
  • Diced avocado
  • Chopped jalapeños (optional)
  • Greek yogurt or sour cream (optional)
  • Cheese (optional)
  • Tortilla chips (optional but highly recommended)

Instructions:

  • Heat a large skillet with olive oil and then add onions and stir occassionaly until they are golden and translucent.
  • Add garlic and stir, 1-2 minutes until fragrant.
  • Add tofu, drained and rinsed beans and let cook/ get brown for a few minutes
  • Add tomato sauce and spices
  • Let the sauce cook down for 5 ish minutes
  • Assemble bowls: Rice, tofu mixture, veggies, cheese, yogurt, chips, etc

These vegetarian taco bowls are easy to prepare and assemble and are absolutely delicious!  They are full of wholesome ingredients and since they come together quickly, you can add them to your weekly dinner rotation.

You can prepare the ingredients ahead of time and assemble before the meal (for example, make tofu scramble, boil rice, slice veggies, and assemble later).
