Five Healthy and Hearty Soups and Stews to Try This Weekend.

Happy weekend, ya’ll!  

I don’t know about you, but this week has felt l-o-n-g to me, but of course as I am writing this, it’s Friday night already, which means Thursday is done, Friday is done, and there are ONLY TWO MORE DAYS AHHHHH slow down weekend!  Why does this always happen?

Either way, I can’t control how quickly the time flies, but I can fill it with fun things and lots of things I’ve been looking forward to doing- like cooking some delicious things to stash in my freezer.  I won’t tell you how many times I ate boiled kale and tuna for dinner this week (three times).  Time for some hearty fare, don’t you agree?  We have been experiencing some rather cold and wet weather these last few days, so you’ll notice a heart and belly-warming stew theme happening here. It’s what I’ve been craving!

This soup has been on my radar for quite some time- it looks awesome!  Full of strong flavors like coconut, curry, and sweet potatoes.  Served with white rice, it’s the perfect winter meal.

My mom sent me this recipe and I’m so excited to try it!  It uses red lentils and lots of spices, giving it that bright, beautiful color.

How AMAZING is 1) that photo and 2) this soup?!  If you need another Instagram account to drool over, follow Chocolate for Basil immediately, and then make this soup.  Full of peanuts, sweet potato, and baked okra- how can you possibly go wrong?

Roasted Chicken and Butternut Squash Soup by Martha Stewartrecipe4

Ok, confession time.  I bought an entire (huge) butternut squash because I thought those recipes above called for butternut squash and, um, they don’t.  So, what to do with all of that bright orange squash?  Make this soup.  Hearty and filling, you can never go wrong with butternut squash soup of any kind.  The onion, squash, and chicken are all roasted together, so that’s going to bring all types of flavors to this stew.

I’ve never made beef stew in my life, but my roommate does and it always looks incredible.  And this particular recipe that I linked to has so many great reviews (almost 2,000) so it MUST be good.  Nothing like an overloaded bowl of beef and flavorful veggies- the perfect, complete meal of meat and potatoes.  Doesn’t get simpler or easier!
