Homemade Pizza Empanadas

Let me tell you how the pizza empanada was born.  I was making pizzas to take to a little futbol party and I realized that with my measly toaster and only one pan, I would be in the kitchen FOREVER (on a beautiful day, nonetheless) trying to use all my dough.  So while one pizza baked, a rolled out a bunch of little circles, threw in all the proper pizza ingredients, folded them up, added a little twist, and there ya go!  Pizza empanadas were born.  And for good measure, I made one filled with almond butter and raspberry jam 🙂DSC_0003
