Turns out, going to the mall, being in the mall, driving around the mall, thinking about the mall (or any store, for that matter), is NOT fun AT ALL this time of year. There are people everywhere, and they aren’t jolly- many of them are rude, in a rush and pushy. ‘Tis the season, no?
Long story short, my few errands yesterday turned into five hours of errands, so I was hungry, cranky and tired when I got home. On the bright side- I did earn $32.00 from selling some unwanted clothing! That’s a bonus. When I got home, I didn’t think the lentil soup was going to happen, but I looked at the recipe and was pleasantly surprised to see that it’s a “throw it all in the pot and wait” type of soup. My fave. And just what I needed to perk up. I watched an episode of SVU while I waited.
Okay, so it looks disgusting, but it tastes delicious. It was warm and hearty and it’s full of fiber, protein and vitamins/ minerals from the vegetables. There is an entire bag of spinach in there! We had it with a few slices of a crusty baguette. Mmmm that’ll be lunch today.
After the lentil soup last night, I went out to see some of my friends from home. We have all been friends since eighth grade (but they were friends before I joined in), and after all these years, they still put up with me. I didn’t get any pictures, but it was fun and we played Cards Against Humanity, which is absolutely hilarious.
Breakfast
I’ve realized that I’m either an early to bed, early to rise, or a little bit late to bed and extremely late to rise kind of girl. I loathe getting up late (late= after 9:00 am) but if I don’t get in bed before 12, it’s like my body is stuck in bed until at least 10 am. AH!
I just woke up a half hour ago, so I am just now eating breakfast:This is how abuela heated food up- in that itty bitty pan.That’s wheat toast with homemade apple sauce, a fried egg and cheddar cheese and a clementine. I put the egg and cheese on the bread and made a sweet ‘n’ salty sandwich.
Now I’m off to sweep and vacuum my room so I can finally start painting. [Not that I actually ended up buying tape yesterday]. I’m going to take a quick break around two for a run and then get back to it! I’ll also be making meatloaf, roasted sweet potatoes and steamed green beans for dinner.
