WIAW: RA Training

Wow, Wednesday already?!  This week’s WIAW will look a little different than the last few weeks since I’m back at school!  Classes haven’t started yet, but I have been in RA Training, and thus, I have been eating in the dining halls!

Head over the Peas and Crayons to see what everyone else is muchin’ on! (Or, actually don’t, cause it doesn’t look like there is one this week.  Ooops!)

Lunch

Lunch is a tricky time in the dining hall, not only because there are so many options to choose from, but more because I usually experience extreme stomach pain after lunch, so I aim to keep things light and fresh…not that it helps. photoeditThere is so much going on here!  Grilled sweet potatoes, sauteed zuchini and squash, spinach, cucumbers, stir-fry with black beans, cauliflower, brown rice and red pepper.  This was actually really good!  Followed by a banana and peanut butter a couple hours later.

There have been a few days this week that I have been able to eat lunch in my room, too.   DSC_0350editA microwaved egg with veggies, multi-grain crackers and a sprinkle of parmesan, followed by a juicy peach!  These will be out of my life in no time.  So, so sad.DSC_0376editOn another day:DSC_0364editCourtesy of my mother: Stuffed green pepper (stuffed with bulgur, eggplant, pinenuts, and lots of other goodies).  Side of grilled chicken breast.  Yum yum!

Dinnerphoto(1)editBaked sweet potato with broccoli, barley, tomatoes, beets, cucumbers, chick peas and some really awful rice dish.  Awful.  Followed by ice cream!

Snacks

If you read my last post, you know what my snacks look like.  photo(2)editI usually pack a snack baggie with trail mix, crackers and granola.  Deeelicious!  I also have a bowl of cereal or yogurt before bed.  Gets the job done!
