Checking In IX

The picture shown above is Luis, my friend Meaghan, and me.  It was taken at Meaghan’s going away party last Sunday.  Meaghan and I have known each other for over two years and she has become such a close friend to me.  She is one of the nicest people I’ve ever met in my whole life, someone you can always trust, and someone who would do anything for people she cares about.  She decided her time in Madrid was coming to an end and has gone back to Santa Barabara, where I KNOW she will do great things, but I am still (selfishly) sad that she has left.

Making: plans to go to ISRAEL!  Luis and I are going to Israel during spring break and I canNOT wait!  It’s going to be a good trip.
Cooking:  not much of anything.  I’ve been eating a lot of salads and random meals.  The last thing I cooked was this coconut vegetable curry from Minimalist Baker.
Drinking: kombucha!  My roommate, Erica, and I got our hands on a SCOBY that has now multiplied 4 times over.  We’ve had kombucha brewing for the last month or so, and I just finished another batch at Luis’!  We have been trying different flavors, but my favorite has been lemon-ginger.
Reading:  LUIS BOUGHT ME A KINDLE!  What a guy!  Completely out of the blue because he was worried about my eyes since I read on my phone.  I was able to link my public library app to the Kindle, which means I can read fo’ FREE.  Right now, I am reading Defending Jacob and really, really liking it.  And absolutely loving the Kindle.  Thank you, Luis!  If you have any book recommendations, please send them my way via comments.
Wanting: summer dresses!  The weather has been a bit warmer and I can feel spring is COMING!  I’m ready for summery sun dresses and sandals.
Looking: through blue-light protection glasses!  I bought these glasses off of Amazon because I was worried that I would damage my eyes since now I work on the computer.  I don’t know if they are helping, but they certainly can’t hurt and I love the way they look!  My dream of having glasses has come true and I didn’t even need to lie to the eye doctor (tried that once).
Eating: ugh, I don’t know.  I’ve been in this weird food rut where nothing really sounds appetizing and so I just graze.  The only thing that ever sounds good is cream cheese.  BUT I did go to a new-to-me restaurant with my good friend, Meaghan, and we shared these stuffed mushrooms that were so yummy!  I also love, love, loved the decor of the restaurant and I’m excited to go back!
Wishing: I could change my attitude and perspective about certain things.  I’m working on it.
Enjoying: a glass of bubbly kombucha.
Loving: going for walks every single morning.  I have been really good about getting out for a 30-45 minute walk Monday- Friday and it does wonders for getting the day off on the right note!
Hoping: that my VIPKID student doesn’t show up!  I am writing this post “in the classroom” and the student isn’t here.  I’m 11 minutes in, so I don’t think they will come.  I love my job, but unexpected breaks are so nice!
Listening: to a few different Spotify playlists.  My recent favorites have been “Acoustic Hits: Oldies but Goodies” and “Warm Fuzzy Feeling”.  They are good playlists to have on at home.
Feeling: a little anxious because I have some new bagel orders for this week and they always make me anxious, but in a good way.
Wearing: leggings and a t-shirt.  Vipkid uniform, REPRESENT.
Watching: nothing.  I have never watched so little TV in my entire life.  I guess that’s a good thing, but I also like to have a show to relax/ unwind with.
Bookmarking: this article by The New York Times.  It’s about being a ‘digital nomad’, which is when you work from the computer, which allows you to essentially work from anywhere in the world.  I guess that’s me.
