Super Produce Prep.

I never thought I would see the day that I say:  “One thing I miss about Lawrence (the school dining hall)”…is the salad bar!

We are a big veggie eating family, which means we often have a lot of fresh produce on hand, but it also means that we go through it quickly and someone needs to purchase more.  Another difference between home and an unlimited salad bar, is that now I actually need to take the time to wash, dry, and chop all of this produce.  I love me some salads, but it often seems cumbersome so I just make a sandwich.  Ha…I am so lazy.

So to solve all of my vegetable problems, after picking up a large haul of produce earlier in the week, I took a few minutes to do a Super Produce Prep.DSC_0029

The idea of SPP is to wash, dry, and chop all the fix-ins for salads, roasted vegetables and veggie snacks for the week, so there is no excuse for unhealthy eating.  In this week’s SPP, I did:

  • A large salad with romaine, tomatoes, cucumbers, and arugulaDSC_0021
  • Carrot coins (for salads or snacks)DSC_0027-001
  • Broccoli florets (for salads or snacks)DSC_0026
  • Sweet potato wedges (to be easily grilled)
  • Chopped romaine (for salads)DSC_0032
  • Small Gala Apples (easily accessible for snacks)DSC_0039-001
  • Large fruit bowl (for snacks and lunches)DSC_0041-001Banana // apricot // nectarines // mango // pear // peach

I’m hoping to do something like this every week, but also include other food prep (grilled chicken, hard boiled eggs, rice, lentils, beans, etc.)  Will share when that happens!

  1. Love this! I am trying to get in a similar habit with produce prep! It would make packing lunch for work so much easier

    1. Thanks for commenting, Ancy 🙂 It makes it so, so, so much easier to pick healthy food when it’s already there & ready! And now with you 100 days, its the perfect time to eat healthy lunches! (except when we go to brunch….)
